At The Coffee Source we select only high mountain coffees which are considered Strictly Hard Bean. Coffee is grown around the world between the Tropic of Cancer and the Tropic of Capricorn at elevation ranging between 100 and 6,500 feet. Throughout this vast region, there are but a few countries which produce truly outstanding coffee. The infinite combination of soil, sunlight, rainfall and climate play a very important role in the overall intrinsic flavor of coffee. In addition, the method by which the coffee is harvested and processed can either make or break an ideal set of growing factors. True estate coffees represent less than one percent of the world's total coffee harvest. They are without a doubt "La crème." The coffee is proudly grown, harvested and milled by the same family for generations with the emphasis on the quality of coffee rather than the cost of production.The Coffee Source is composed of a group of Costa Rican coffee producing families who for generations have adhered to strict tradition of quality...
At The Coffee Source we select only high mountain coffees which are considered Strictly Hard Bean. Our estate coffees come from the finest growing regions in Costa Rica; La Luna Tarrazú from the famous Tarrazú region, Doka Estate from Sabanilla de Alajuela, San Antonio from the Tres Ríos region.
To ensure that all of our coffee has reached the perfect stage of ripeness, we wait until mid-harvest, when all of the beans are at their optimum level of maturation. The coffee is immediately gathered to prepare for the wet process. We then carefully spread the coffee out on our patios to dry the old-fashioned way, in the warmth of the Costa Rican sunshine. Methodically turning the coffee on our patios, it may take us up to 15 days for the coffee to reach its ideal humidity level of 11%. (Compare this to 10-20 hours using industrial heat dryers). Few producers still use this time-consuming method, but we´re convinced that the difference comes through in the coffee we so proudly produce: 100% SUN DRIED.
After sun-drying, we carefully remove the "pergamino", which is the bean´s outer protective shell. It is here that we finally expose the dark green bean "oro" and prepare the coffee for further classification. Bean by bean the coffee is now inspected again for defects, which can only be seen by a trained human eye. Only those perfect in size, formation and color are selected for delivery.
